How to make a really moist banana bread? Any tips?

I just made 14 loaves of banana bread about a month ago and everyone I gave them to raved about how moist and delicious it was. The sour cream guarantees a moist and tender loaf. that is my secret;) Good Luck!

Banana Bread (Makes 2 full size loaves or 4 mini loaves)

Ingredients

1/2 cup butter, melted
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sour cream
1/2 cup chopped walnuts
2 medium overripe bananas, mashed

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
In a large bowl, stir together the melted butter and sugar. Add the eggs and vanilla, mix well. Combine the flour, baking soda and salt, stir into the butter mixture until smooth. Finally, fold in the sour cream, walnuts and bananas. Spread evenly into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.

I made banana bread about two days ago and tried something different because I wanted moister banana bread. Instead of using a metal loaf pan, I used one made of silicone. When I pulled my loaf out of the oven, my bread was done and it looked like there was a little condensation on the silicone. I think the silicone mold holds in moisture better than the metal pans.
Here are some other tips...
It´s very important that you cream the butter and sugar. (That means that you whip it until the texture gets creamy with a mixer.) This will make it fluffier.
Also, add your eggs in one at a time. If you don´t the mixture will curdle and the texture will be different. What I do, for a recipe that calls for two eggs, is beat the two eggs together in a separate bowl and add them in four increments between mixing. You want your eggs to be really well mixed before adding any more.
Also, you may want to try cutting down your cook time. Baked goods that cook at lower temperatures for longer periods of time become hard and dry. Bump the temperature up by 15º and cover with tin foil to avoid burning on the top. Don´t forget to take your loaf out about 10 minutes earlier than the recipe calls for if you are using higher temperatures. To check for doneness, poke with a toothpick, if it comes out clean, you´re done. Good luck. I hope this helps.

make sure your recipe calls for oil.
a tip is to make sure that your banana or Overripe so they are easier to mash, and more importantly sweeter ! i just made banana bread for thanksgiving.
